This morning’s breakfast was another Fixate special, Banana Oat Pancakes! I love that I can have access to so many gluten free recipes with my Beachbody on Demand membership! Get yours now, here. While I’m not strictly gluten free, my daughter is and I have found that I enjoy these recipes just as much and some times more than the regular ones. I added a couple slices of turkey bacon with my pancakes and topped them with some berries to complete the meal.
Here’s the recipe:
Banana Oat Pancakes
1 cup unsweetened almond milk
2 large eggs
1 large ripe banana
1 tsp pure vanilla extract
1 tsp baking powder, gluten-free
1/2 tsp ground cinnamon
1 dash seas salt
2 cups old fashioned rolled oats, gluten free
1/2 tsp extra virgin organic coconut oil
3 cups mixed berries
Place almond milk, eggs, banana, extract, baking powder, cinnamon, salt, and oats i blender; cover. Blend until smooth.
Heat oil in nonstick skillet over medium-low heat.
pour 1/4 cup batter onto the skillet; cook for 2-3 minutes, or until bubbles form around the edges of the pancake. Flip with spatula’ cook for an additional 90 sec.
I was apprehensive about making this Pesto Tomato Chicken as I’m not really a pesto fan. But, boy am I glad I took a leap and went for it! It was simply amazing-packed with flavor! Apparently, I’ve been having the wrong kind of pesto because this homemade pesto was delicious and made this meal complete.
Obviously, I can’t take credit for coming up with this recipe. It came from none other than Autumn Calabrese’s cooking show, Fixate. Where can you find this cooking show, you ask? Pesto Tomato Chicken (Calabrese Chicken)
2 Cups fresh Basil
3 Garlic cloves
2 Tbsp pine nuts
1/4 cup Pecorino Romano Cheese
1/4 tsp salt
1/4 cup + 2 tsp Extra Virgin Olive oil
Part-Skim Mozzarella 2 oz
Drizzle olive oil in pan on high heat, add chicken. Season with pepper to taste. Cook chicken for about 3-4 minutes per side. While chicken is cooking, place fresh basil, garlic cloves, pine nuts, pecorino romano cheese and salt in food processor and set to pulse. While food processor is running, ad 1/4 cup + 2 tbsp EVOO. With the chicken still in the pan, add 2 tsp Pesto to each chicken breast, top with 1 thick slice of tomato and basil. Top off with the slice of mozzarella. Add a bit of water to pan then cover with a lid to get the cheese to melt.
Drizzle each breast with Balsamic for extra flavor!
