Healthiest Year Yet

It’s that time of year again, time to make new year resolutions.  I got to be honest with you and tell you that up until a few years ago, I never made resolutions.  Heck, I never even set goals for anything.  No goals, no disappointment when I didn’t reach them, right?  Thankfully, I’ve learned a few things since then.  This year, I have BIG goals, personal, business and fitness goals.  My plan is to make 2017 my and YOUR healthiest year yet!  Who’s with me??

One of my goals that I want to share with you is this-  I am making it my mission to help at least women REACH their health and fitness goals for the year.  Now, I’ve helped lots of women start their health and fitness journey but I’ve also witnessed several quit before their journey was over.  🙁  NOT THIS YEAR!  This year I’m going to make sure that at least 50 women, begin and CRUSH their goals!  That is WHY I love what I do-seeing women succeed, gain confidence, become empowered and shine!

So, here’s my question to you……Do you want to be part of my 50 in 2017???  Do you want to make 2017 your Healthiest Year Yet???

Mexican Chicken Tortilla Soup

Who doesn’t love piping hot soup on a frigid cold winter day?!  I think that may be one of my favorite things about this time of year, soup season!   Soup is so great because, you can totally make it your own, by adding and substituting foods that you prefer.  For instance, the original recipe for this Mexican Chicken Tortilla soup didn’t call for frozen corn but I decided to add it in.  I also substituted Feta cheese for Cotija and I omitted the cilantro.  The other nice thing about soup is that you can make it totally healthy, like this recipe!  And the best thing about soup is that it is even better as leftovers!!  I’ve been eating this soup for lunch the last two days and loving it!  Mexican Chicken Tortilla Soup is the perfect soup for warming those insides up on this cold days!

Mexican Chicken Tortilla Soup

Mexican Chicken Tortilla Soup


  • 8 6 inch tortillas, divided use
  • 2 tsp olive oil
  • 1/2 cup chopped onion
  • 2 cups sliced celery
  • 2 cloves garlic, chopped
  • 4 medium tomatoes, chopped
  • 6 cups low-soduim organic chicken broth, divided use
  • 3 cups chopped rotisserie chicken breast, boneless, skinless
  • 1 1/2 cups sliced carrots
  • 1 tsp dried Mexican oregano leaves
  • 1 tsp ground ancho chili powder
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/2 medium avocado, chopped
  • 1/4 cup chopped fresh cilantro
  • 4 tsp crumbled Cotija (or feta) cheese


  1. Preheat oven to 350
  2. Line large baking sheet with parchment paper
  3. Place tortillas o baking sheet.  Bake for 8-10 minutes, or until toasted and crispy.  Remove from oven.  When cool, break into pieces.  Set aside.
  4. Heat oil in large saucepan over medium heat.
  5. Add onion and celery; cook, stirring frequently, for 5 minutes, or until onion is translucent.
  6. Add garlic; cook, stirring frequently, for 1 minute.
  7. Add tomatoes; cook, stirring frequently, for 5 minutes, or until tomatoes are soft.  Set aside.
  8. Add onion mixture, 2 cups broth, and half of toasted corn tortilla pieces to blender; cover.  Blend until smooth.
  9. Add blended mixture to large saucepan.  Add remaining 4 cups broth, chicken, carrots, oregano, chili powder, salt, and pepper.  Bring to a boil over medium-high heat.  Reduce heat to medium low; cook stirring occasionally, for 10 minutes, or until carrots are tender.
  10. Top each serving evenly with avocado, cilantro, cheese, ad remaining toasted tortilla pieces.
