Pumpkin Breakfast Cookies

Well, I told you before, I love everything pumpkin, so of course, I have to share another pumpkin inspired recipe!  This one is great because you can prepare it on Sunday and have it ready all week for a quick breakfast on the go, as a snack or to quench that sweet tooth craving.  It is also kid-approved!  These pumpkin Breakfast cookies are a must try!  For extra sweetness, throw in a few dark chocolate chips!

Pumpkin Breakfast Cookies

Ingredients

  • 1 Cup rolled Oats
  • 1 Cup quick Oats
  • 2/3 Cup dried cranberries
  • 1 tsp Pumpkin pie spice
  • 1/2 tsp salt
  • 2/3 Cup Pumpkin seeds
  • 1/4 Cup ground Flax seed
  • 1/4 Cup Coconut oil
  • 1/4 Cup honey
  • 2 eggs
  • 1/2 Cup Pumpkin

Directions:

Preheat oven to 325.  Line baking sheet with parchment paper.  In a small bowl, warm coconut oil and honey in the microwave until coconut oil becomes liquid.  In a another bowl, mix remaining ingredient then add honey and coconut oil.  Stir until fully combined.  Drop 2 Tbsp mix on parchment paper.  Flatten if preferred-cookies will not spread while baking.  Bake for 15-20 minutes until edges are lightly browned.  Let cool on baking sheet before moving to airtight storage container.  Store in refrigerator.

Who doesn’t love quick and easy???  It doesn’t get much easier than this quick Honey Dijon Chicken dinner!  Throw the ingredients all together and then toss it on the grill!  Healthy, delicious, and easy= my kind of dinner!  Even better, you’ll likely already have these ingredients lying around your cupboards and refrigerator!

Honey Dijon Chicken

Ingredients

  • Four 6oz chicken breast halves
  • 1/3 cup Dijon mustard
  • 3 Tbsp Honey
  • 1 Tbsp parsley flakes
  • Salt, to taste

Directions:

Mix dijon mustard with honey, add parsley flakes and salt.  Coat a 6 oz chicken breast half in the mixture.  Cook on gill for about 7 minutes on each side (or until chicken is fully cooked).

Steam some frozen or fresh broccoli or veggie of choice, then top with 1 Tbsp olive oil, 2 tsp garlic salt, and 4 Tbsp of Parmesan and you’ve got yourself a healthy meal!

Fall into a fitness routine

There is so much to love about Fall- the colors, the pumpkin everything, the cooler weather…Oh yea, and the kiddos are back in school!!!  I kid, I actually love having my kids home for the summer!  There’s always the point when I’m ready to get back on a schedule though.  Most of us just function better when we are on a schedule, me included!  So, it’s time for us all to fall back into a fitness routine.  It’s time to throw out the excuses as we finally take some time for ourselves.

Whether you are looking to improve our nutrition, lose weight or just get back into exercising on a regular basis, my next group is for YOU!

Tired of starting over?

If you are tired of starting over, making excuses or failing to at starting and completing your health and fitness journey, I understand!  I’ve been there so many times in the past.  I was the girl that started a fitness routine and NEVER finished!  I was the girl that always had an excuse as to why I couldn’t workout or eat right.  Life has a tendency to get in the way.  We are always overcommitting ourselves.  Our heath should not suffer!  We must make ourselves a priority!  It’s truly amazing what a difference  just 30 minutes a day ca make in our lives!

My Fall into a Fitness routine group will be kicking off on the 26th of September.  I’m going to walk you on a 30 day journey to cleaning up your nutrition, to helping you create a routine of working out and eating healthy!  You will get constant support, accountability, meal plans and recipes from me.

How does Gratitude affect your life?

Gratitude changes everything

Yesterday, I made a live video on Facebook where I touched on the subject of gratitude.  Since not all of my followers are on Facebook and because I wanted to elaborate more on the subject, I decided to do a blog post.  It’s important to me, to share with you how having gratitude can affect your life.  Because it has had such an impact on mine.

When I became grateful

September 13th was the 10 year anniversary of my mother’s sudden death.  She died at the age of 52, way too young.  The hearts of her kids and grandkids and so many others, were broken that day and continue to try to mend.  I’m telling you this because this is just the beginning of my gratitude story.

Her death broke me in so many ways, I thought that I would never heal.  I carried around self-pity, sadness and anxiety for years.  The chain of events that occurred after her death didn’t help with those feelings, more loss, more anxiety, more sadness.  Some people carry those feeling around forever but at some point I made a decision to let them go.  It wasn’t an easy decision and it didn’t happen over night.  But it was one that had to be made for the sake of my sanity, my marriage and my children’s well being.  One day I looked around and saw all the beauty before me.  I saw all of the things that I had to be grateful for.  My life wasn’t perfect but it was a good life and God had a purpose for me even if I didn’t know what it was yet.

Letting go

It was when I started to let that sadness, anger, and anxiety go, that I started noticing a change in my life.  I gave it all to God, and in return He gave me peace.  He gave me gratitude.  He gave me the will to make my life better.  Holding onto such negative thoughts and feelings only leads us down a path of negativity.  We can not change our lives until we change our mindset!

Everyday, I wake up and the first thing I do, is thank God for all the amazing things in my life.  EVERYDAY!  No matter how bad life can get, you can always find something to be grateful for-your health, your family, your home, your kids’ health, the ability to earn a living, friends, a job, etc.  There is ALWAYS something to be grateful for!  When you start to realize that and focus your energy on gratitude, amazing things will start to happen!

My challenge to you is this: starting tomorrow, wake up and find three things that you are grateful for and write them down.  Do this everyday!  As a bonus, look at them before you go to bed at night.  This will help to remind you of how blessed you are.  Going to bed thinking happy thoughts will help you sleep better too!  Do this for a a couple weeks and then report back to me.  Let me know how you are feeling.  Let me know how gratitude has affected your life!

Pumpkin Muffins with Maple Cream Cheese

It’s officially September now, which means, time to break out everything pumpkin!!  Who doesn’t love pumpkin??  I started this season off with Autumn Calabrese’s recipe for Pumpkin Muffins with Maple Cream Cheese, yes I said Maple Cream Cheese!!!  You know since it’s Autumn’s recipe,  it’s 21 Day Fix approved! Yummy without all the guilt!!

Pumpkin Muffins with Cream Cheese

Ingredients

  • 2 oz cream cheese
  • 1 Tbsp pure maple syrup
  • 1 large egg, lightly beaten
  • 1 cup canned pumpkin puree
  • 1 1/2 cup almond flour
  • 3/4 tsp baking soda, gluten free
  • 1 dash sea salt
  • 2 Tbsp raw pumpkin seeds

Preheat oven to 350 degrees.  Prepare nine muffin cups by lining with muffin tin liners or coating with spray.  Set aside.  Combine cream cheese and maple syrup in a small bowl; mix well.  Set aside.  Combine egg and pumpkin in a medium bowl; mix well. Set aside.  Combine almond flour, baking soda, and salt in a medium bowl; mix well.  Add almond meal mixture to egg mixture; mix until just blended.  Spoon batter into each prepared muffin cup, filling a little less than 1/2 full.  Spoon about 1 heaping tsp. cream cheese mixture into the center of each muffin.  Evenly fill muffin cups 3/4 full with remaining batter.  Sprinkle muffins evenly with pumpkin seeds.  Bake 16-18 minutes, or until golden brown and toothpick inserted into the center comes out clean.  Transfer muffins to rack; cool.
